Instructions

1. Heat the oven to 325ºF (165ºC).

2. Quickly cook the ham on each side in a medium skillet over medium-­high heat until it just begins to brown, about 1 minute on each side.

3. Grease a 1-quart shallow casserole dish with butter and lay the pumpkin in it. Remove the skin and coarsely mash the pumpkin, sprinkle with the thyme, drizzle with the butter, and season with the salt and pepper to taste.

4. Scatter the pineapple over the pumpkin and lay the ham slice on top. Mix together the maple syrup, orange juice, cinnamon, and mustard. Pour over everything and bake for 20 to 30 minutes, until the pumpkin is very soft and the ham lightly glazed.

5. Cut a wedge of ham and serve with a spoonful of pumpkin and a little juice.
